Ingredients

Ribs:

  • 2 racks baby back ribs

Rub:

  • 3 tablespoons brown sugar

  • 2 teaspoons garlic salt
  • 1 teaspoon mustard powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon bacon salt (optional)

Sauce Starters:

  • 1 1/2 cups ketchup
  • 1 cup diced onion
  • 1/2 cup apple cider vinegar
  • 1 cup hard cider
  • 1/8 cup soy sauce
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons prepared mustard
  • 2 tablespoons canola oil
  • 1 tablespoon mustard powder
  • 2 teaspoons chopped garlic
  • 1/2 teaspoon black pepper

Sauce Finishers:

  • 1 cup ketchup
  • 1/2 cup brown sugar
  • 1/3 cup apple cider vinegar
  • 1/3 cup honey
  • 1/4 cup prepared mustard
  • 1 teaspoon crushed red pepper flakes

Instructions

  1. Mix all rub ingredients and coat ribs liberally. Cut ribs into 3โ€“4 bone sections and place vertically in Instant Pot.
  2. Combine sauce starter ingredients and pour over ribs. Close lid, set to high pressure for 25 minutes.
  3. Use quick release, remove ribs carefully. Repeat if cooking more than 2 racks.
  4. Finish ribs: grill briefly or broil to caramelize sauce.
  5. While finishing, combine sauce finisher ingredients in Instant Pot on simmer for 2โ€“3 minutes.
  6. Serve ribs with sauce and favorite BBQ sides.
